STEWED CHICKEN 
6 chicken thighs
1 lg. green pepper, diced
1 lg. onion, diced
2 sticks celery, diced

Place 3 tablespoons of oil in heavy pot. Arrange chicken thighs on bottom of pot, placing green pepper, onions and celery on chicken. Add salt and pepper (to taste). Cover with water, making sure chicken and vegetables are covered. Partially cover pot with lid and cook slowly until all water is absorbed.
