HOMEMADE ICE CREAM | |
For 1 gallon freezer: 6 eggs, well beaten 2 1/2 c. sugar 1 pkg. Junket ice cream mix, optional 1 lg. can evaporated milk 1 tsp. vanilla Approx. 1 1/2 qt. milk Desired flavoring For 1 1/2 gallon freezer: 8 eggs 8 1/2 c. sugar 1 pkg. Junket, optional 2 lg. cans evaporated milk 1 1/2 tsp. vanilla Approx. 2 qt. milk Desired flavoring Mix in order given, beating thoroughly. Add desired flavoring mixture and mix well. Finish filling bowl with regular milk and stir well. Pour into freezer can and finish filling can with regular milk being sure to leave about 2 inches at the top to allow for expansion. Freeze. Using 1 1/2 gallon electric freezer, I use about 3/4 carton Morton table salt and plenty of ice. Later pour off the water and pack with more salt and ice. Flavoring suggestions: Adapt to freezer size and individual preference. Banana Nut: about 3 mashed bananas, 1/2 to 1 cup chopped pecans, vanilla Junket; Pineapple: two flat cans crushed pineapple and juice, Vanilla Junket; Strawberry: 1 or 2 package frozen strawberries, thawed mashed, red food coloring, strawberry or vanilla Junket; Chocolate: use chocolate Junket; Chocolate chip: grate up large Hershey bar; Peach: fresh or frozen peaches, mashed. |
