CHICKEN/CASHEW NUTS 
1/2 c. cashews
4 tbsp. oil
2 chicken breasts, boned and diced
1 tbsp. cornstarch
1 tsp. sugar
1/2 tsp. salt
1 tsp. vetsin
1 scallion
1/2 tsp. ginger

Toast 1/2 cup cashews in 2 tablespoons oil. Set aside. Add 3 to 4 tablespoons oil to skillet. Mix cornstarch, sugar, salt, and vetsin. Dip chicken in batter and fry until cooked. Add scallion and ginger. Season with a little soy sauce. Add nuts to chicken; mix well.
