BEEF STEW 
1 - 1 1/2 lbs. stewing beef
1 c. Italian bread crumbs
1 onion, chopped
2 c. chopped carrots
3 c. cubed potatoes
1 can stewed tomatoes
Vegetable oil
1 can corn, green beans or peas (optional)

Although stewing beef comes cut up, I like to cut mine up into smaller, bite size pieces. I also discard any large pieces of fat. A little bit is okay, it adds flavor.

In a soup pot, cook onions in oil until they become transparent, about 3 minutes. Roll beef in bread crumbs and add to pot. Cook, stirring, to brown meat.

Add stewed tomatoes, squishing them in your hand as you put them in the pot. (Or use food processor, lightly.) Add 2 cans water. Add chopped carrots and potatoes. Add optional veggies according to your family's taste. Simmer 1 to 2 hours, stirring occasionally or cook all day in crock pot.
