PECAN-CRUSTED SALMON 
4 small salmon fillets
1/2 cup flour
2 eggs, beaten
1 cup finely chopped pecans

(May want to cut ingredients in half.)

Preheat oven to 400°F. Lightly coat a baking sheet with cooking spray. Pat dry salmon fillets; dredge in flour, dip in egg and cover with pecans. Place on baking sheet and bake for about 15 minutes. (Larger fillets may require longer baking time so adjust according.)
