SHRIMP SCAMPI 
1 1/2 lbs. shrimp, cleaned & deveined (if very large, butterfly)
1/2 c. olive oil
Salt & pepper
1/2 c. minced parsley
4 minced garlic cloves
2 minced shallots or scallions
1/4 tsp. oregano

Saute shrimp in hot oil for 5 minutes, shaking or stirring briskly. Season shrimp with salt and pepper. Remove shrimp from oil to hot oven proof platter.

Add remaining ingredients to oil and saute for 3 minutes, shaking pan. Pour sauce over shrimp and broil for 2 minutes.
