BAKED ZUCCHINI WITH PARMESAN 
6 med. zucchini, unpeeled
1/2 c. water
3 tbsp. melted butter
1/3 c. freshly grated Parmesan cheese
Salt
Pepper
Fresh dill, basil, or parsley

Place washed and tipped zucchini into 1/2 cup boiling water. Cover tightly and cook 10 minutes. Remove from pan; drain and cut in half lengthwise. Place in shallow baking dish; add salt, pepper, and herbs (if desired). Drizzle with melted butter and top with Parmesan. Bake at 375 degrees for 20 minutes.
