MACARONI AND CHEESE SOUFFLE | |
1/2 c. macaroni, cooked 1 1/2 c. scalded milk 1 c. soft bread crumbs 2 c. (1/2 lb.) grated American cheese 3 beaten egg yolks 1/4 chopped pimento 3 tbsp. melted butter 1 tbsp. chopped parsley 1 tbsp. grated onion 1/2 tsp. salt 3 egg whites 1/4 tsp. cream of tartar Pour hot milk over bread crumbs. Add 1 1/2 cups cheese, cover, and let stand until cheese melts. Add macaroni, egg yolks, pimento, butter, parsley, onion and salt. Beat egg whites with cream of tartar until stiff, but not dry and fold into macaroni mixture. Pour into a baking dish and set in a shallow pan and fill to 1 inch with hot water. Bake at 350 degrees for 45 to 60 minutes. Add remaining cheese and melt. Serves 6. |
