YORKSHIRE PUDDING 
2 eggs
1 c. flour
1 c. milk
2 tbsp. oil or roast drippings
Pinch of salt (1/2 tsp.)

Preheat oven to 400 degrees F. for 1/2 hour. Place 10x15x2 1/2 glass pan with oil or drippings into oven to heat hot smoking fat.

Meanwhile, beat together eggs and salt to a frothy mixture; slowly add milk, then flour, beating constantly. Pour into hot pan quickly so not to loose heat. Bake in the middle of oven for 15 minutes. Reduce heat to 375 degrees F. for 15 minutes more. (Pudding has risen oven top of pan). Crisp and golden brown. Slice into portions. Serve immediately with roast.
