SUNDAY MEAT LOAF 
1 1/2 to 2 lbs. ground beef
2 eggs
1 c. bread crumbs
1/2 c. onions, minced
1/4 c. green pepper, minced
3 tbsp. ketchup
Salt (to taste)
Pepper (to taste)
3 eggs, hard boiled & peeled, but not sliced
Ketchup (for top)

By hand, mix all ingredients, except hard boiled eggs and ketchup for top. Put half of mixture in loaf pan. Put hard boiled eggs in a row on top of mixture. Top with remaining meat. Bake at 350 degrees for 1 hour, or until done. (During last 15 minutes, top meat loaf with ketchup.)

The hard boiled eggs give this meat loaf both added flavor as well as a colorful surprise when sliced for serving.
