SWEET SMOKIN' SCALLOPS 
1 pint bay scallops
2 tbsp. butter
1 tbsp. diced red bell pepper
1 tbsp. garlic, chopped
1 tbsp. smoked maple syrup
1 cup good dry white wine
freshly ground black pepper, to garnish
chopped parsley, to garnish

Melt butter in a pan, sauté the garlic and pepper briefly. Add the scallops, wine, and smoked maple syrup. Cook until most of the liquid is reduced.

Serve garnished, and enjoy with the rest of the bottle of wine.
