ZUCCHINI MUFFINS | |
2 eggs 3/4 c. salad oil 2 c. sugar 1 tsp. vanilla 2 c. grated zucchini 1 sm. can (8 1/2 oz.) crushed pineapple, include juice 3 c. flour 2 tsp. baking soda 1/2 tsp. baking powder 1 1/2 tsp. cinnamon 3/4 tsp. nutmeg 1 c. chopped walnuts 1 c. raisins 1/2 c. oatmeal Beat eggs to blend. Add oil, sugar and vanilla; beat until foamy. Stir in zucchini, pineapple and add to dry mixture. Blend in oatmeal, nuts and raisins. Spray muffin tins with Pam. Do Not use cupcake liners. Pour into muffin pans, bake 15-20 minutes at 350 degrees. Makes 30. |
