ZUCCHINI MUFFINS 
2 eggs
1/2 c. honey
1 tsp. vanilla
1/2 c. brown sugar
1/2 c. butter
1 3/4 c. flour
1 tsp. baking soda
1/2 tsp. nutmeg
1 1/2 tsp. cinnamon
1 c. Granola or oatmeal
1/2 c. nuts
2 c. grated zucchini

Mix first five ingredients together. Add remaining ingredients. Bake at 350 degrees for 25 minutes. Makes 18 muffins.

DIETITIAN'S NOTE:

What a great way to use zucchini! Most granolas are high in fat. Oatmeal is a better ingredient choice. Other ways to reduce fat and/or cholesterol:

Eliminate nuts; choose a butter that lists liquid oil as the first ingredient; substitute 2 egg whites or 1/4 cup egg substitute for each egg.
