OATMEAL BATTER BREAD 
1 cake or 1 pkg. yeast
1/2 c. lukewarm water
1 c. scalded milk
2 tbsp. butter
2 tbsp. brown sugar
1 1/2 tsp. salt
1 egg
2 1/4 c. all-purpose flour
3/4 c. oatmeal, uncooked

Soften yeast in warm water. Pour scalded milk over butter, sugar and salt. Stir until butter melts; cool. Beat in egg. Add 1 cup flour, beat 2 minutes at medium speed. Stir in yeast. Stir in remaining flour and oats.

Cover. Let rise in draft free place until doubled in size, about 1 hour. Beat down and turn into well greased 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan. Let rise until doubled. Bake at 375 degrees (moderate) 35- 40 minutes. Remove from pan. Butter top. Makes 1 loaf.
