BROCCOLI CORNBREAD 
1 (10 oz.) pkg. broccoli
1 box Jiffy cornbread muffin mix
4 eggs
1 c. cottage cheese
1 tsp. salt
1 stick butter
1 med. onion

Cook chopped broccoli according to package instructions. Drain. Add chopped onion. Beat eggs, cottage cheese and salt together. Add muffin mix, melted butter and broccoli. Grease a 9 inch pan; pour in mixture. Bake in 400 degree oven for 25 minutes or until lightly browned.
