MARINATED TOMATOES 
When tomatoes are in season I use fresh ones, and scold skin off and dice them up, this is when I use the water.

1 (29 oz.) can tomatoes
1 medium size onion, sliced thin
1 medium size bell pepper, sliced thin
1 medium size cucumber, sliced thin

SALAD DRESSING:

1 cup vinegar
1/2 cup oil
1 cup sugar
1/2 cup water (I use the juice of the tomatoes)
1 tsp. salt (I like sea salt)

Add tomatoes, onion, pepper and cucumbers. Then pour dressing over this, cover and refrigerate overnight.
