SPRITZ COOKIES 
1 c. butter
3 egg yolks
2 1/2 c. sifted flour
2/3 c. sugar
1 tsp. almond or vanilla extract

Add sugar and butter; cream thoroughly until mixture is light and fluffy. Beat in egg yolks and flavoring. Add 1 cup flour and beat until batter is smooth. Add remaining flour to dough and mix in by hand until well blended.

Chill dough about 30 minutes. Use cookie press to press cookies on sheet. Bake for 8 minutes until set, NOT brown.
