BEEF STROGANOFF 
3 lb. lean sirloin tip beef
3 tbsp. butter
1 lg. onion, thinly sliced
4 tbsp. flour
1 can consomme
1 can tomato soup or cream of mushroom soup
1 tsp. Worcestershire sauce
Salt & pepper to taste
1 carton sour cream
1/2 tsp. paprika

Cut beef across grain into narrow 2 inch long strips. Brown beef in butter in large skillet. Add onion; cook 2-3 minutes. Sprinkle flour over beef; stir well. Add consomme and soup. Cook until sauce thickens, stirring constantly. Add Worcestershire sauce, salt and pepper; cover. Simmer for 1 hour or until tender, stirring occasionally. Stir in sour cream and paprika. Serve over noodles or rice.
