CREAM CHEESE SPRITZ | |
2 1/2 c. sifted flour 1/2 tsp. salt (optional) 1/4 tsp. cinnamon 1 c. soft butter 1 (3 oz.) pkg. cream cheese 1 c. sugar 1 egg yolk, unbeaten 1 tsp. vanilla Set oven for moderate 350 degrees. Grease baking sheets. Mix and sift flour, salt, and cinnamon and return to sifter. In a mixing bowl, beat butter and cheese until well mixed. Add sugar, a little at a time, beating after each addition until well blended. Beat in egg yolk and vanilla. Sift and add dry ingredients to butter mixture and blend well. Pack dough into a metal cookie press, using the desired forming plate. Press dough onto baking sheets. Have baking sheets cold before putting cookies on them. If they are warm, cookies will pull away from the pans when press is lifted. Bake 15 minutes, or until edges are light brown. Remove from pans and cool on a rack. Makes about 7 dozen. |
