APPLE JELLY 
4 c. apple juice
2 tbsp. strained lemon juice
3 c. sugar

Measure apple juice into a pan. Add lemon juice and sugar. Stir well. Boil over high heat or until jelly mixture breaks from the spoon in a sheet or flake. Remove from heat, skim off foam quickly. Pour immediately into hot jars. Makes 3 to 4 pints.
