WHOLE WHEAT BANANA NUT BREAD | |
1/4 c. plus 2 tbsp. butter, softened 3/4 c. firmly packed dark brown sugar 2 eggs 1 1/2 c. whole wheat flour 3/4 c. all-purpose flour 2 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 3 tbsp. buttermilk 2 c. mashed ripe banana 1 c. chopped pecans 1 tsp. vanilla Cream butter; gradually add sugar, beating well. Add eggs, one at a time, beating well after each addition. Combine flour, baking powder, soda and salt; add to creamed mixture alternately with buttermilk, beginning and ending with flour mixture. Stir in banana and pecans. Pour batter into a greased 9 x 5 x 3 inch loaf pan. Bake at 350 degrees for 1 hour and 10 minutes. Cool in pan 5 minutes, remove to wire rack, cool completely. |
