WHOLE WHEAT BANANA NUT BREAD 
1-1/2 cups sugar
2/3 cup shortening (half butter, half shortening)
2 eggs
1 mashed ripe bananas (takes about 3)
1/2 cup buttermilk
1 level teaspoon baking soda (dissolve in milk)
2 cups whole wheat flour
1 cup chopped pecans
1 teaspoon vanilla extract

Mix in order given. Bake in greased loaf pans or muffin tins in slow oven (about 300°F). Bake until toothpick comes out clean when inserted in cake. (1/2 c. cracked soy may be used instead of nuts.)
