WHOLE WHEAT BANANA BREAD 
1 c. mashed bananas (3 lg. ripe)
2 tbsp. vegetable oil (walnut oil adds an interesting flavor)
2 lg. eggs
1/3 c. sweetener (sugar or concentrated apple juice)
2 tbsp. water
2 c. whole wheat flour
1 1/2 tsp. baking soda
1 1/2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. nutmeg

Mix in one bowl with beater: Bananas, oil, eggs, water and juice. Sift together in another bowl all remaining dry ingredients. Mix both wet and dry ingredients gently. One half to 3/4 cup walnuts can be added to final mixture, if desired. Pour into greased non-stick loaf pan, 9x4 inches. Bake 40-45 minutes at 350 degrees.
