APPLE PIE FILLING 
7 qts. sliced apples
5 1/4 c. sugar
1 1/4 c. cornstarch
3 tsp. ground cinnamon
3 1/2 tsp. lemon juice
1/4 tsp. nutmeg or apple pie spice
1 tsp. salt

In large pot blend sugar, cornstarch, cinnamon, nutmeg, and salt. Stir in 11 cups of water; cook until thick and bubbly. Add lemon juice and pack apples in quart jars and pour mixture over apples; process 20 minutes in hot water bath or 15 minutes at 5 pounds pressure.
