BUTTER BEAN SALAD 
1 can butter beans, drained (or cook 1 1/3 c. dried beans until tender)
Salt and white pepper to taste
3 slices bacon
1/2 c. peeled, seeded, chopped tomatoes
1 tsp. tomato paste
1 1/2 tbsp. olive oil
1 tsp. lemon juice
A little honey

Season beans. Cook bacon until crisp. Drain on paper towel; crumble and add to beans. Put tomatoes, tomato paste, oil, lemon juice and honey in blender; process until tomatoes are pulpy. Pour over bean mixture. Toss gently. Chill to develop flavors. Garnish with snipped chives or chopped scallions.
