BEEF GOULASH SOUP | |
1 1/2 to 2 lbs. beef 1 lg. onion 1 tsp. paprika 1 tsp. black pepper 1 tbsp. salt 6 potatoes 5 carrots Cut beef into 1 inch cubes. Dice onion. Put into soup pot on a low flame; let it stew for about 15 to 20 minutes, it will make its own juice. Meanwhile, heat 1 1/2 quarts of water to boiling. Add diced potatoes and carrots with seasonings to beef in pot. Add the boiling water to beef Cover. Let it simmer slowly for about 2 hours, or until beef and vegetables are tender. This soup is exceptionally good when eaten the next day. |
