FRUIT JEWELS 
2 pkg. gelatin
1-1/3 c. water
1 c. fruit, your choice

In a bowl, mix 1 package of gelatin with 2/3 cup boiling water, until completely dissolved. Line 12 cup mini-muffin pan with cupcake liners. Place 1-3 pieces of fruit (depending on size) into each cup. Pour gelatin over fruit. (The fruit will float to the top of each cup.) Repeat with second package of gelatin and remaining fruit. Refrigerate 2 hours or until firm.

Approx. 80 calories and 0 grams of fat per serving.
