LAYERED PARTY RICE 
3 1/2 c. cooked rice
2 tsp. turmeric
1 c. Vinaigrette Dressing
Salt and pepper to taste
1 head Boston lettuce, shredded
4 lg. carrots, shredded
2 lg. apples, cored and diced
2 sm. green bell peppers, chopped
2 oranges, peeled and sliced
2 tsp. chopped chives

Stir together rice and turmeric in large bowl until rice is evenly golden. Stir in 1/2 cup of the dressing, the salt and pepper. Spread 2 1/2 cups of the rice mixture in bottom of large straight-sided glass serving bowl. Toss lettuce with 2 tablespoons dressing.

Layer lettuce, then carrot on top of rice. Cover with remaining rice; layer apples, then green peppers over second rice layer. Pour remaining 1/4 cup dressing over salad. Arrange oranges on top; sprinkle with chives. Makes 8- 10 side-dish servings.
