OVEN - FRIED CHICKEN 
1 broiler chicken, about 2 lbs. quartered, with skin and fat removed
1/4 c. low-calorie Italian dressing
1/4 c. salt-free tomato juice
1/2 tsp. garlic powder
1 tsp. onion flakes
1/2 c. whole wheat bread crumbs or crushed corn flakes
Paprika

Place chicken, Italian dressing, tomato juice, garlic powder and onion flakes in plastic bag. Let chicken marinate for 30 minutes at room temperature or several hours in refrigerator. Turn frequently. Place crumbs in a second plastic bag. Drain chicken and shake a piece one at a time to coat with crumbs. Arrange chicken, bone side down, on a nonstick baking sheet sprayed with nonstick cooking spray. Sprinkle with paprika. Bake in upper third of a preheated 375 degree oven for 50 to 60 minutes, until crisped. Serves 4.
