RICE CASSEROLE ITALIANO 
1 pkg. frozen or 2 c. sliced fresh zucchini
1/2 lb. ground beef
1/2 c. chopped onion
1/2 clove garlic, minced
1/2 tsp. salt
1/2 tsp. basil and oregano
1/8 tsp. pepper
1 c. cooked rice
1/2 c. tomato sauce
1/2 c. cottage cheese
1 egg, beaten
1/2 c. grated cheese

Cook zucchini in boiling, salted water for 2 to 3 minutes. Drain well and set aside. Saute ground beef, onion, garlic, and seasonings. Drain off grease. Stir in rice and tomato sauce. Set aside. Blend cottage cheese and egg together. Arrange half of zucchini in greased casserole. Spoon on meat mixture. Spread cottage cheese over meat. Add rest of zucchini. Sprinkle with cheese. Bake at 350 degrees for 20 to 25 minutes or until hot and bubbly. Serves 3 people.
