ZUCCHINI BREAD 
3 c. grated zucchini
1 c. oil
3/4 c. honey
2 eggs, beaten
1 tsp. vanilla
3 c. whole wheat flour
1 1/2 tsp. baking powder
1 1/2 tsp. cinnamon
1/2 tsp. ground cloves
1 tsp. salt
1 c. chopped nuts
1 c. raisins

Grate zucchini. Beat together oil, honey, eggs, and vanilla. Sift dry ingredients. Combine mixtures and blend. Add nuts, raisins, and zucchini. Bake at 350 degrees for 1 hour. Freezes well for later use. Makes 1 large loaf.
