MUSHROOM CELERY STUFFING 
1 lb. fresh mushrooms, sliced thin
1 1/2 c. chopped celery, with leaves
1 lg. onion, chopped fine
1 c. butter
7 c. soft bread cubes
2 tsp. poultry seasoning
1 tsp. salt
1/2 tsp. pepper

In skillet saute mushrooms, celery, onion in butter until mushrooms are tender. Toss mixture with bread cubes, poultry seasoning, salt and pepper. Makes 9 cups stuffing for a 10-12 pound turkey. Can be baked in greased covered baking dish or casserole at 325 degrees for 45 to 60 minutes. For a drier, crisper stuffing, uncover last 15 minutes.
