BANANA BREAD 
1 1/4 c. unbleached flour
1/2 c. whole wheat flour
1 c. sugar
1 egg
1/4 - 1/2 c. raisins
1 tsp. baking soda
1 tsp. salt
1 1/2 c. mashed banana (about 3 bananas)
1/4 c. butter (softened)
2 tbsp. orange juice
1/4 tsp. lemon juice

Grease and flour bottom of 9 x 5 inch loaf pan.

In a large bowl, mix all ingredients for 3 minutes. Pour into pan and bake at 325°F for 60 to 70 minutes, or until an inserted toothpick comes out clean.
