MY "ADORABLE" BEAN LOAF
1 lg. can kidney beans
1/2 lb. American (or cheddar) cheese
3 tbsp. butter
2 eggs, beaten
1 1/2 c. soft bread crumbs
1 1/4 c. tomato sauce
Salt

Drain the beans well and put them, with the cheese, through a food grinder. Cook the onion in butter. Combine the bean-and-cheese mixture with onion and beaten eggs. Mix in the bread crumbs, seasoning it to taste. Pour the mixture into a well greased loaf pan. Bake it uncovered for 1 hour in a 350 degree oven. Remove it from the pan, slice it, and serve it with tomato sauce. Serves 6 to 8.

The above is called a "loaf" but it can be served as a part of a meal in which "refried beans" are needed. It is marvelous as a filling for homemade burritos.

I was in charge of the Junior Division of our Sabbath School (I'm a Seventh-Day Adventist) for a few years. One Sabbath I brought approximately a dozen children (ages 9 to 12) home with me for lunch and served this loaf. Every child gobbled it up, and one dubbed it "adorable."
