SUE'S CONNECTICUT BEEF DISH | |
2 tbsp. oil 2 lb. lean beef stew, cut into 1 inch cubes 2 lg. onions, sliced 1 c. water 2 lg. potatoes, sliced thin 1 can cream of mushroom soup 1 c. sour cream 1 1/2 c. milk 1 tsp. salt (if desired) 1/2 tsp. pepper 1 c. grated cheese 1 1/4 c. crushed corn flakes or bread crumbs Brown meat and onion in oil. Add water and heat to boiling. Reduce heat, cover and simmer 50 minutes. Heat oven to 350 degrees. Put meat mixture in 9 x 13 inch pan. Arrange potato slices on meat. Stir together soup, sour cream, milk, and seasonings. Pour over potatoes. Sprinkle with cheese and crumbs. Bake uncovered 1 1/2 hours or until done. Serves 8. |
