BETTAN'S CHICKEN 
2 lbs. fresh broccoli
12 chicken breasts, halves
4 tbsp. butter
Salt and pepper or salt substitute
1 pt. sour cream
1 1/4 oz. pkg. onion soup mix
1 c. whipping cream or Cool Whip
1/4 c. Parmesan cheese

If you substitute Cool Whip use 1 cup Cool Whip and add 1 pkg. powdered Dream Whip. Mix with electric mixer until thick.

Clean broccoli and cook in salted water until crisp. Place in large buttered baking dish. Skin chicken breasts. Heat butter in a large skillet until golden and brown chicken in butter. Season with salt and pepper and cook over low heat until tender. Remove chicken and cut into chunks. Combine sour cream, onion soup mix, and pan juices. Spread half of the mixture over broccoli and top with chicken chunks. Whip cream and fold into remaining amount of sour cream, spread over chicken. Sprinkle with Parmesan cheese and bake at 350 degrees for 20 minutes or until nicely browned. Serves 6-8. This is good served with rice and a fruit salad.
