5 lbs. firm pears (15 c. sliced) Juice of 2 lemons 10 c. sugar Rind of 2 oranges Juice of 3 oranges Peel pears and cut into small pieces. Add sugar and let it stand overnight. Grind orange rind, then add with juices to pears. Cook until thick, about 1 hour and 20 minutes. Pour into sterilized jars and seal according to directions while hot. Makes about 6 pints. |
