CHICKEN BREASTS WITH MUSHROOMS 
3 whole chicken breasts, boned, split
2 well beaten eggs
1/2 tsp. Accent
1 tsp. salt
1 c. fine bread crumbs
1/2 c. butter (clarified) for frying
Thin strips of Muenster cheese
1/2 c. rich chicken broth
1 lemon
Thinly sliced mushrooms

Cut breasts into strips about 3 per whole breast. Beat eggs with salt and Accent. Let chicken stand in egg mix for at least 1 hour. Dip in fine bread crumbs, fry in butter until golden, turning once.

Place in casserole, cover with sliced mushrooms. Lay strips of cheese over top. Bake, uncovered, at 350 degrees for 15 to 20 minutes longer if made ahead and refrigerated. Don't bake ahead. Baste during baking with broth at room temperature. Squeeze lemon on top before serving.
