CHICKEN AMARETTO 
6 chicken breasts, boned and skinned
1 tsp. salt
1/2 tsp. pepper
1/4 tsp. garlic powder
1/4 tsp. curry powder
1/4 c. flour
1/4 c. butter
1/2 lb. fresh mushrooms, sliced
1/4 c. amaretto
Grated rind and juice of 1 lemon
1 tbsp. cornstarch
1 1/2 c. chicken broth

Cut chicken in 1 inch strips. Mix salt, pepper, garlic, curry, and flour together in a bag. Melt butter, add chicken pieces and saute quickly. Reduce heat, add mushrooms, amaretto, lemon rind and juice.

Simmer 5 minutes, mix cornstarch and 2 tablespoons water to form paste with chicken broth. Stir mixture into skillet with chicken. Cook over low heat, stirring constantly until mixture bubbles and thickens. 6 to 8 servings.
