SALTED PEANUT CAKE 
1 c. sugar
1/3 c. shortening
1 tsp. baking soda
1 c. salted peanuts, ground (Spanish)
1 egg
1 1/3 c. flour
1 c. buttermilk

Cream sugar and shortening. Add egg. Sift flour and soda and stir in alternately with buttermilk. Add ground peanuts and beat together. Bake at 350 degrees for 25 minutes or until done in 9"x13" pan. Frost with powdered sugar and cream cheese frosting or plain powdered sugar frosting with a little ground peanuts sprinkle on top.
