JAN'S HOMEMADE GRANOLA
This recipe can be made as a gluten-free cereal using gluten-free oats like Bob's Red Mill brand. Quaker oats are not guaranteed to be gluten free. All the brands of the ingredients I use, like nuts, fruits, seeds, oils, honey and maple syrup are gluten-free. I checked on the package or on the Internet.

3 cups old-fashioned dry oats
1 cup sliced almonds
1 cup cashews
1 cup peanuts
1 cup chopped walnuts
1 cup chopped pecans
1/3 cup brown sugar
3/4 tsp. kosher salt
1 tbsp. cinnamon
1/2 cup seeds (Chia, sesame, hemp, etc. - your choice)
1 cup shredded coconut flakes
1/3 cup olive oil
1/3 cup honey
1/3 cup real maple syrup

Preheat oven to slow (250°F.)

In a bowl mix first 11 ingredients with fork.

In a small bowl, measure olive oil, honey and syrup. Pour into above oat mixture and stir will with fork to ensure all ingredients are covered with liquid mixture.

Use two heavy duty cookie sheets and cover with parchment paper.

Pour half of the bowl on each cookie sheet.

Bake at 250°F for 1 hour 15 minutes; stirring with fork every 15 minutes. Mixture should be a light golden brown when done.

When done, put all baked granola in a large bowl.

1 cup Craisins (dried cranberries)
1 cup regular raisins
1 cup yellow raisins

In a separate bowl, measure Craisins and raisins. Mix well into oat mixture and allow to cool.

Store in glass jar, plastic storage bags, etc.
