"MINI" CHEESE CAKES 
1 box graham cracker crumbs
1 stick butter (enough to grease pans)
2 lg. cream cheese
3/4 c. sugar
3 egg yolks
3 egg whites, beaten

Mix cream cheese, sugar and egg yolks together. Butter 4 mini muffin pans, sprinkle with graham cracker crumbs. Shake out excess. Fold next 3 ingredients into beaten egg whites. Fill pans 3/4 full. Bake at 350 degrees for 15 minutes. Remove from oven. Place on cookie sheet. (Mix 3/4 cup sour cream, 2 1/2 tablespoons sugar, 1 teaspoon vanilla, 1 cup sour cream, 2 1/2 tablespoons sugar and 1 teaspoon vanilla. Drop in center circle of cakes. Bake 5 minutes more at 400 degrees.
