2 sticks butter 5 1/2 tbsp. powdered sugar 1 1/4 c. flour 1/2 c. cornstarch 1/4 tsp. almond extract (or vanilla) Cream butter with powdered sugar in large bowl with electric mixer. Sift in flour and cornstarch; mix thoroughly. Add flavorings and chill about 1 hour. Shape into balls the size of walnuts with fingers and place on greased baking sheet. Flatten with bottom of a small, wet glass. Bake at 350 degrees for 10 minutes. These cookies should NOT brown. Carefully remove from pan while warm and spread with a glaze of powdered sugar, warm water, and a little almond extract (or vanilla extract). If desired, while glaze is wet, you may sprinkle with colored sugar. A very short - not very sweet cookie. Great for teas/receptions, etc. |
