FINNISH APPLE TORTE 
1 3/4 sticks butter
1 1/4 c. sugar
2 eggs
3/4 c. potato starch or cornstarch
1 1/2 c. flour
1 1/2 tsp. baking powder
3/4 c. milk

Beat butter until fluffy. Add eggs carefully, alternately with flour, starch and baking powder. Add milk alternating with remaining flour. On top arrange in row 5 to 6 apples (peeled and cut into slices). Top with sugar and cinnamon or sugar and nuts (optional). Bake at 350 degrees in 9 x 13-inch pan, greased and floured.

You can also use this for blueberry torte. Add 1 to 1 1/2 quarts blueberries, 1/4 cup starch or 1/2 cup sugar.
