POTATO SALAD WITH SHRIMP 
8 cooked potatoes
2 c. sliced celery
Salt
2 c. mayonnaise
2 lbs. cooked, sliced shrimp
Pepper

Wash and cook potatoes in skins. Boil in salted water until tender. Cool, skin, and dice. For 8 servings, use 4 cups diced potatoes. Meanwhile, cook 2 pounds shrimp in boiling, salted water to cover for 4 minutes. Be sure water is boiling and do not overcook. Drain and cool. Shell, devein, and cut lengthwise. Use homemade mayonnaise, if possible. Bought mayonnaise contains sugar and some starch and thus changes the flavor of the finished product. Mix potatoes, celery, shrimp, and mayonnaise with 2 forks. Additions of chopped parsley, chopped chives, or chopped anchovies may be welcome. Season to taste with salt and pepper. Garnish with sliced hard cooked eggs and parsley or watercress or tomato. Serve on a salad green.
