CHEESY POTATOES 
12 lg. potatoes, cooked, cooled, peeled & diced
2 sm. onions, diced
1 lb. cheese (part American, part Cheddar)
1 sm. jar pimento
1 green pepper, diced
1/2 lb. butter
8 tbsp. milk
Salt & pepper

Dice all ingredients. Melt together butter and milk. Mix potatoes, onions, cheese, pimento and green pepper together. Pour butter-milk mixture over all ingredients. Add seasonings. Place in a large flat cake pan and bake uncovered for 1 hour in a 350 degree oven. Toss potatoes occasionally at the beginning of the baking period. Serves approximately 12.
