ZUCCHINI NUT BREAD 
4 eggs
1 1/2 c. brown sugar
3/4 c. oil
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
2 tsp. cinnamon
2 c. grated zucchini
1 c. chopped walnuts
1 tsp. vanilla

350 degrees 30 minutes (check with toothpick, to see if comes out clean)

Beat eggs. Gradually add sugar and oil. Combine dry ingredients. Add to egg mixtures. Add zucchini then stir in nuts and vanilla. Flour 4 bread pans and fill about 1/2 way.
