MARY'S ZUCCHINI NUT BREAD 
2 c. peeled grated zucchini
3 eggs
1 1/2 c. sugar
1 stick butter, softened
3 c. flour
1/2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 tbsp. pure vanilla extract
3/4 c. chopped walnuts

Preheat oven to 350°F. Grate zucchini and set aside. Beat eggs with sugar until pale yellow and thickened. Add the butter.

Sift together flour, salt, baking powder, soda and cinnamon. Fold into egg mixture. Stir in vanilla and walnuts.

Add grated zucchini, mix well. Spoon and scrape mixture into buttered loaf pan (9 x 5 x 2 3/4). Bake 1 hour or until bread pulls away from side of pan.
