GRAPE - NUT WHOLE WHEAT MUFFINS 
1/4 c. milk
1/4 tsp. salt
2 tsp. baking powder
3 tablespoons vegetable oil
1 c. Grape Nuts
1 c. whole wheat flour
2 egg whites
1/2 c. raisins and dates
1 teaspoon pure vanilla

In a teacup, stir together raisins, dates and vanilla. Allow to soak, stirring occasionally for at least 10 minutes before using.

Combine in a mixing bowl the milk, salt, baking powder, Grape Nuts, vegetable oil and whole wheat flour. Add egg whites and beat hard for 1 minute. Add raisins and dates (and the vanilla they soaked in); beat. Spoon into muffin pans and bake at 400 degrees for 15 to 20 minutes, being careful not to overbake.

Makes 1 dozen muffins.
