SEVEN LAYER SALAD | |
1 1/2 lb. fresh spinach, washed 8 hard boiled eggs, diced 2 pkg. frozen peas 2 tbsp. sugar 1 lb. bacon 1 sweet onion, thinly sliced 1 sm. head lettuce 1/2 lb. coarsely grated Swiss cheese 1/2 c. mayonnaise 1/2 c. salad dressing, or all mayonnaise Break spinach into bite size pieces; add 1 tablespoon sugar to each package of peas (do not cook). Cut bacon into small pieces, fry and drain on paper towel. Tear lettuce into bite size pieces. Dice eggs, slice onion and grate cheese. Layer all ingredients. Spinach, peas, bacon, lettuce, eggs, onion, and cheese in a container large enough to hold them. Cover tightly and refrigerate overnight. At serving time, combine mayonnaise and salad dressing and spread on top. Chill overnight. |
